Just in case you think my love affair with the Excalibur dehydrator might have been a flash in the pan (so to speak), you should know that I'm about to fill my 27th spice jar with dried, powdered peppers (think cayenne, paprika, jalapeno, aji crystal ...). Yesterday I counted something like twenty-five quarts of variations on a theme of dried tomatoes, and have filled two large boxes with uncounted bags of a variety of dried veggies.

If you've never tried dried apple rings lightly sprinkled with cinnamon, you just haven't lived.

One more Excalibur recommendation: the V-slicer. It actually does exactly what it is advertised to do, and we all know that's sadly unusual these days. Perfect 1/4" slices in seconds makes for consistent, evenly-dried food. And the prep time is minimal, making the garden-to-drying journey really quick — best for the food and all its yummy nutrients.

OK, so much for the soap box commercial.

I've always wondered about the value of having a dehydrator, but after reading the follow up on it along with the pictures this has to go onto my "want list" Thanks for the great info.
