		<description>My understanding is that potatoes sprout when it&#039;s getting to be the right time for planting wherever they were grown.  You can&#039;t speed them up or slow them down.  Because they&#039;re native to places very near the equator, they are not sensitive to what we think of as seasonal triggers (amount of light, temperature).  We have some starting to sprout, too.  I tend to cut out the sprouts like I would cut out eyes, and to look carefully for green parts to be discarded.  Odds and ends of potatoes could make nice home fries or chowder.  (Chowder broth can be as easy as milk seasoned with salt and pepper.)</description>

		<description>Mine did the same thing and I had them in a brown paper bag in the cool basement.  You could save them an plant them.  You really shouldn&#039;t eat them with the sprouts.  

I&#039;m going to plant mine, see what some up.</description>
