You are absolutely on the money. If you want to consider Alice Waters an "elitist", do so because she may be one of the only people in the world with a perfect palate. She knows what food SHOULD taste like. She knows you can't achieve that today without WORK and for those willing to do that work the payoff is huge. P.S.
