Summer is just zipping by!This week’s One Local Summer Challenge meal was brought to you courtesy of the grill again:
- beef tenderloin from Stuarts Family Farm (medium rare, because I can!)
- zucchini from…(I forgot, but definitely from a local farmers market. Could be Maple Bank Farm, could be Waldingfield Farm. I guess I need to go back to posting the bounty from my foraging excursions)
- yellow squash from my next door neighbor’s garden
- corn on the cob (not pictured) from Wild Carrot Farm (butter from Vermont Butter & Cheese Co.)
I used olive oil, salt and pepper for the “marinade” for the squashes, all from the larger world)
And for dessert:
- vanilla ice cream from Ferris Acres Creamery
- blueberries from Averill Farm (if you ever get the opportunity, try their cider donuts!)
Although it’s nearly over, it finally feels like summer.
