Chocolate Chili

This recipe was adapted from the recipe at Everyday Food at PBS.org. Basically, it's my previous chili recipe with their chocolate and bacon and swapping out a number of other ingredients for local options.

  1. Cook until brown and crispy

bacon, cut in pices

  1. Remove bacon to paper towels and pour off bacon fat into a measuring cup.
  2. Heat up a heavy pot, Dutch oven, or casserole pot (like Julia Child's) on medium-high and add

ground beef

  1. Brown the beef.
  2. Lower the heat to medium and add

garlic (minced or squeezed through a garlic press)

onions, chopped

jalapeno peppers, sliced (seeds optional, depending on your heat index)

  1. Once the onions are soft, add

red wine

chili powder

cumin

raw cacao powder

  1. Stir and let cook together for about five minutes.
  2. Add

whole peeled tomatoes

tomato puree

cooked beans

maple syrup


salt to taste (about 2-3 tsp)

  1. Let simmer for about an hour (while you make the Corn Bread).
