Corn Bread

  1. Preheat oven to 400° F.
  2. Grease and flour a 9x9" baking dish or pan.
  3. In a bowl, combine:

corn meal
1
c
wheat flour
1
T
baking powder
1
t
salt

  1. In another bowl, combine:

1
c
milk
1/4
c
maple syrup or honey
1

egg
1/4
c
oil (or melted butter or rendered bacon fat)

  1. Combine both mixtures and pour into the greased baking dish.
  2. Bake for 20-25 minutes or until a toothpick comes out clean.

Note: I like to use medium course ground corn meal, which won't cook completely in this manner. To ensure the course meal cooks through, mix the corn meal with the milk in a microwave safe bowl and microwave that for about two minutes and then let it rest for another two minutes. Combine with the wet ingredients and proceed from there.
