Salsa - Fresh

It is particularly delicious with fresh, in-season ingredients.

Makes about one cup.

  1. Combine:

plum tomatoes (Roma, San Marzano), diced
1
small
red onion, very finely chopped

cloves
garlic, minced (use a garlic press)
1
medium
jalapeno pepper, finely chopped (with the seeds and web for a hotter salsa). You can use other hot chiles if you prefer.

minced fresh cilantro

lime (juice only)


salt and pepper to taste

  1. Refrigerate for two to four hours.
