Roasted Pumpkin Seeds
A delightful and nutritious snack.
- Preheat the oven to 250° F.
- Remove the pumpkin seeds from the pumpkin, picking out the stringy pulp by hand.
Do not wash the seeds--there are nutrients and flavor you don't want to send down the drain.
Obviously, the quantity of seeds will vary with each pumpkin. The quantities below are based on a one-cup yield of seeds. Adjust based on your yield.
- In a bowl, toss together:

butter, melted |

salt, to taste |
- Spread the seeds in one layer on a baking sheet.
- Roast for about one hour, stirring two to four times.
- Cool completely and store in a sealed container at room temperature.
