Roasted Pumpkin Seeds

A delightful and nutritious snack.

  1. Preheat the oven to 250° F.
  2. Remove the pumpkin seeds from the pumpkin, picking out the stringy pulp by hand.

Do not wash the seeds--there are nutrients and flavor you don't want to send down the drain.

Obviously, the quantity of seeds will vary with each pumpkin. The quantities below are based on a one-cup yield of seeds. Adjust based on your yield.

  1. In a bowl, toss together:

butter, melted


salt, to taste

  1. Spread the seeds in one layer on a baking sheet.
  2. Roast for about one hour, stirring two to four times.
  3. Cool completely and store in a sealed container at room temperature.
