Linzer Shortbread Cookies

These are rich and my personal favorite.

Yield: 36 cookies.

  1. Preheat oven to 325.
  2. Place the following in a food processor:

all-purpose flour
1/2
c
sugar
1/2

salt

Whirl for 5 seconds.

  1. Add:

unsalted butter (at room temperature, cut into 16 pieces)

Whirl until dough forms a ball (about 1-2 minutes).

  1. Divide the dough in half and then divide each half into 18 pieces.
  2. Roll each piece into a smooth ball. Slightly flatten each ball. With your thumb, make a deep impression in the center of the ball.
  3. Line the depressions with:

sliced almonds

  1. Bake in the lower third of the preheated oven for 20 minutes.
  2. Spoon into each depression:

1/4
t
raspberry jam

  1. Bake 15 more minutes.
