Linzer Shortbread Cookies
These are rich and my personal favorite.
Yield: 36 cookies.
- Preheat oven to 325.
- Place the following in a food processor:

all-purpose flour |
1/2 |
c |
sugar |
1/2 |
t |
salt |
Whirl for 5 seconds.

unsalted butter (at room temperature, cut into 16 pieces) |
Whirl until dough forms a ball (about 1-2 minutes).
- Divide the dough in half and then divide each half into 18 pieces.
- Roll each piece into a smooth ball. Slightly flatten each ball. With your thumb, make a deep impression in the center of the ball.
- Line the depressions with:
- Bake in the lower third of the preheated oven for 20 minutes.
- Spoon into each depression:
