Fruit Bars

Preheat oven to 350° F.
Combine in a medium mixing bowl:

all-purpose flour

quick-cooking rolled oats
2/3
c
firmly packed brown sugar
1/4

baking soda
Using a pastry blender or two knives, cut in:

butter
Reserve 3/4 cup of the crumb mixture.
Press remaining crumbs into the bottom of an ungreased 9x9x2-inch baking pan.
Spread with filling.
Sprinkle with reserved crumbs
Bake 30-35 minutes in a 350° oven (until top is golden).
Cool and cut 5 pieces by 5 pieces.
Filling
Combine in a medium saucepan:

snipped dried fruit (such as apricots or cherries)
1/2
c
water
Bring to boiling.
Cover and simmer for 5 minutes.
Gradually stir in:
1/4
c
sugar
1
T
all-purpose flour
Cook and stir another minute or until thick.
Optionally, stir in:
1/2
c
shredded coconut
