Fruit Bars

Yield: 25 bars

  1. Preheat oven to 350° F.
  2. Combine in a medium mixing bowl:

all-purpose flour

quick-cooking rolled oats

c
firmly packed brown sugar

baking soda

  1. Using a pastry blender or two knives, cut in:

butter

  1. Reserve 3/4 cup of the crumb mixture.
  2. Press remaining crumbs into the bottom of an ungreased 9x9x2-inch baking pan.
  3. Spread with filling.
  4. Sprinkle with reserved crumbs
  5. Bake 30-35 minutes in a 350° oven (until top is golden).
  6. Cool and cut 5 pieces by 5 pieces.

Filling

  1. Combine in a medium saucepan:

snipped dried fruit (such as apricots or cherries)
1/2
c
water

  1. Bring to boiling.
  2. Cover and simmer for 5 minutes.
  3. Gradually stir in:

1/4
c
sugar
1
T
all-purpose flour

  1. Cook and stir another minute or until thick.
  2. Optionally, stir in:

1/2
c
shredded coconut
