Hoppin' John

  1. In a medium saucepan, heat until boiling:

dried black-eyed peas (about 1 c)

  1. Cover and remove from heat. Let it stand for 1 hour.
  2. Fry and drain:

diced bacon

  1. Add bacon to peas along with:

crushed red pepper

onion, sliced

  1. Cover and simmer until peas are tender.
  2. Stir in:

uncooked rice

c
stewed tomatoes, undrained and cut coarsely

large green pepper, caorsely chopped

salt


pepper to taste

  1. Cover and simmer, stirring occasionally until rice is tender (about 25 minutes). Add more water if necessary.
