Hoppin' John
In a medium saucepan, heat until boiling:

lb
dried black-eyed peas (about 1 c)
Cover and remove from heat. Let it stand for 1 hour.
Fry and drain:

lb
diced bacon
Add bacon to peas along with:
1/8-1/4

crushed red pepper

onion, sliced
Cover and simmer until peas are tender.
Stir in:
1/2
c
uncooked rice
1
c
stewed tomatoes, undrained and cut coarsely
1/2
large green pepper, caorsely chopped

salt
pepper to taste
Cover and simmer, stirring occasionally until rice is tender (about 25 minutes). Add more water if necessary.
