Smashed Potatoes

A new family favorite!

Yield: 4 servings.

  1. Add to a 4-quart pot:

lbs
red potatoes, scrubbed (not peeled) and cut into cubes (about 10-12 potatoes)


water (to cover potatoes and an extra 2 inches)

salt (optional)

  1. Bring to a boil and allow to cook for 25 minutes.
  2. When the potatoes are done, drain and put in a warm mixing bowl (or return to the pot).
  3. Add:

butter

sour cream (heaping)


salt and pepper (to taste)

  1. Mash (or beat at the second lowest speed with cake mixing attachment on Kitchen Aid mixer).
  2. Serve hot.

Variations

Roast a few (2-3) cloves of garlic and mash along with everything else.
