Tahini & Feta Salad

  1. Assemble the salad:

crumbled feta cheese

green onions (scallions), finely chopped

black olives, sliced

  1. Mix the dressing

tahini
1/4
t
dried minced garlic

fresh mint leaves, minced
1/4
t
salt
1

lime, juiced

water (more or less to achieve a dressing-like consistency)

  1. Add dressing to salad and toss to combine.
  2. Optionally, sprinkle some pre-soaked cracked wheat over the top. (Soak bulgur in water for about 20 minutes.)
  3. Serve.
