String Bean and Potato Salad

  1. Gently steam (keep them somewhat crunchy) and then chill:

string beans (green beans)
  1. Scrub, boil, chill, and then cut:

potatoes (about 1-1/2 lbs) I like the red ones with the skin left on.

  1. Combine the ingredients above and:

red onion (finely chopped)

tomato (sliced into small wedges)

can
pitted black olives

olive oil

dried oregano or thyme

salt (more or less, to taste)

  1. Toss, chill, and serve.
