Wheat Berries
Wheat berries are the whole wheat kernel without the hull. You can mill them to make flour, sprout them to make wheat grass, or plant them to make more wheat. Or you can cook them the way they are.
Notes
Wheat berries work really well in salads. They're simple to make and don't require bread or crackers. Here are some examples:
- Bruschetta salad: add diced tomatoes, chopped onions, minced garlic, and basil with some olive oil, red wine vinegar, salt, and pepper. Maybe add some shaved Parmigiano-Reggiano.
- Salsa salad: add diced tomatoes, chopped onions, cilantro, and hot chiles with some olive oil, lime juice, salt, and pepper. Maybe add some cubed Monterey Jack.
- Greek salad: diced tomatoes, chopped onions, pitted kalamata olives, oregano, and peperoncini with some olive oil, lemon juice, salt, and pepper. Maybe add some cubed Feta.
