Oatmeal Cookies

These are the soft and chewy kind. You can make them even chewier by using all brown sugar instead of any white sugar. Alternatively, you can make them crispy by swapping the amounts of the sugars and the amounts of the baking powder and baking soda.

Yield: 48 cookies.

  1. Preheat oven to 375° F.
  2. Cream together:

packed brown sugar

granulated sugar

  1. Add in and cream some more:

vanilla extract

  1. In a separate bowl, combine:

baking powder

baking soda

ground cinnamon

flour

rolled oats

  1. Stir dry mixture and creamed mixture together. Then stir in:

raisins

  1. Roll into balls, about a tablespoon each onto greased cookie sheets (or lined with parchment paper) and bake for 10 minutes.
