This week’s One Local Summer Challenge meal is oven-roasted chicken and pink potatoes. Sorry I’m posting way past the deadline–hope you forgive me and I make it! It was a very tasty meal nonetheless.
- chicken from Stuarts Family Farm
- chicken broth, mine from the freezer from last week
- white wine is Snow Goose from McLaughlin Vineyards
- shallots from Don Taylor, Danbury
- fresh garlic from Missy’s Farmstand, Goshen, NY (courtesy of the Brewster Market)
- sage and thyme, dried, from my garden last year
- pink potato from Maple Bank Farm, first harvest of the season
- salt, pepper, and olive oil from the world
The residual liquid from roasting makes a fine au jus kind of sauce.
Again, another simple meal that anyone can do! See, nothin’ to this locavoring thing–give it a try!
I’ve never heard of pink potatoes! Looks delish though!
I haven’t seen the potatoes yet, have you found them at the farmers’ markets? You are so right, this time of year it is almost hard *not* to be a localvore, there are so many goodies right in front of our eyes.
MC: Yes, I got the potatoes from Maple Bank Farm at the Bethel Farmers Market.
Virginia: I have since learned that they’re called Cranberry potatoes.
