Folks around here agree that we suffered an incredibly harsh winter. The cleanup from the storms has farmers working even harder than they ordinarily do—putting their farms back together. They’re also harvesting crops from season extension crops and preparing for the regular season. Still, there is something magical about Nature and how she continues to give.
Over at Sport Hill Farm, Patty’s got overwintered spinach, leeks, and carrots. Yes, some of last year’s vegetables survived the winter and are still trying to grow! Incredible and edible. I spent a bit of time foraging through the remains (before they plow them over for this year’s rotation) and came home with carrots, spinach, and leeks. Indeed, you can expect an upcoming Challenge Meal post coming out of that too!
I also came home with lettuce from this year’s crop, which were getting an early start in the hoop house.

Speaking of farmers extending the season, these are Sara’s greens in their hoop house (Daffodil Hill Growers).
I personally think Sara and Patti are in cahoots to get me to eat salad.
